creamy mashed potatoes
Ingredients:
- 4 baking potatoes (medium to large size), peeled and roughly chopped
- 4 tbsp butter
- 1 c whole milk
- 3/4 c heavy whipping cream
- salt + pepper
Instructions:
- In a large pot, fill with water (enough to cover the potatoes) and a sprinkle of salt and bring to a boil. Add the potatoes and boil for 20 minutes, until potatoes are very tender. Remove from heat, strain the potatoes, and place in a large mixing bowl.
- While the potatoes are boiling, melt the butter in a sauce pan and just before the butter is fully melted, add the milk and whipping cream. Continue stirring until the butter is full melted and the liquid is warm.
- Add some of the warm cream mixture to the mixing bowl with the potatoes and being to mash the potatoes (I prefer using a hand mixer for a fluffier, smoother consistency). Add the remaining amount of the warm cream and continue mixing until the potatoes are fluffy and smooth. Add the salt and pepper to taste and mix a little more.
- Serve the mashed potatoes warm and enjoy!
