Skillet Cornbread

Ingredients:

  • 2 8.5oz boxes Jiffy corn muffin mix
  • 2 eggs
  • 2/3 c milk (we use whole milk)
  • 2 c thick cut, medium cheddar cheese
  • 1 15oz can corn
  • 1 tbsp butter + a little extra to grease the skillet
  • this recipe works best in a 10in cast iron skillet 

Instructions:

  1. Preheat oven to 400 degrees. 
  2. Prepare cornbread mix according to package directions in a large mixing bowl, remember the recipe on the cornbread box will be doubled. 
  3. After the cornbread mix is combined, add the cheese and corn to the mixing bowl and gently fold it in.
  4. Pour the cornbread mixture into the greased skillet, spreading it to make sure it is evenly distributed. Bake in the oven for about 30 minutes (until a toothpick pulls out clean from the center and it is golden brown on top).
  5. After the cornbread is removed from the oven and while it is still warm, rub the 1 tbsp of butter over the top of the cornbread to add a little extra goodness.
