Chocolate Chip Ice Cream SandwichEs
Ingredients:
- Costco Mini Chocolate Chip Cookies (60ct container) or substitute with your choice of mini (about 1.5 to 2 in) chocolate chip cookies
- Vanilla Ice Cream (we always use Bluebell)
- Sprinkles (optional)
Instructions:
- Set out ice cream to slightly thaw (about 8-10 minutes).
- Line a baking sheet with wax or parchment paper and arrange cookies in rows, topside down, on the baking sheet. You do not have to use all of the cookies – just set out two cookies for each sandwich you want to make.
- Once the ice cream has slightly thawed, use a spoon or a scoop (not completely full) to place a dollop of ice cream onto a cookie, place a second cookie on top of the ice cream and gently press down to form a cookie sandwich with a little ice cream on the edges.
- If you are adding sprinkles, pour the sprinkles into a bowl and roll the ice cream on the outer edges of the cookie sandwich in the sprinkles.
- Place the complete cookie sandwich on the lined baking sheet. Repeat the cookie sandwich process until the desired amount are completed. Then, place the cookies in the freezer to refreeze for at least one hour. *Don’t try to eat them right away – they will be too melty.
