Classy grilled cheese

This recipe is a go-to in my kitchen for a simple and filling lunch or dinner. The additional protein adds just enough class to separate this sandwich from a traditional grilled cheese.

Ingredients:

  • 2 slices country white bread from bakery (but any loaf of bread will work for this recipe)
  • 2 slices of colby jack cheese
  • 2 slices of turkey lunch meat 
  • 5 pepperonis
  • Butter (about 1/4 tbsp) for the griddle
  • Optional: Ranch Dressing
Instructions:
 
  1. Heat griddle on stovetop to medium heat and allow butter to melt to grease griddle (a skillet will work too).
  2. Place both slices of bread on the griddle to toast one side of each slice of bread.
  3. Once each slice of bread is lightly toasted on one side, flip both slices of bread over. 
  4. Quickly place a slice of cheese on the toasted side of one slice of bread, then add on top of the cheese, the 2 slices of turkey, then the 5 pepperonis, and finally top with the second slice of cheese. Place the other slice of bread, toasted side inside, on top of the slice of bread covered with the meat and cheese. 
  5. Allow the cheese to melt to hold the sandwich together, but make sure the bottom slice of bread is not burning. Flip the sandwich over to toast the other side and continue melting the sandwich together.
  6. As soon as both sides of the sandwich are toasted to your preference, remove the sandwich from the griddle and serve (optional to serve with ranch dressing for dipping).
