creamy mashed potatoes

Ingredients:

  • 4 baking potatoes (medium to large size), peeled and roughly chopped
  • 4 tbsp butter
  • 1 c whole milk
  • 3/4 c heavy whipping cream
  • salt + pepper

Instructions:

  1.  In a large pot, fill with water (enough to cover the potatoes) and a sprinkle of salt and bring to a boil. Add the potatoes and boil for 20 minutes, until potatoes are very tender. Remove from heat, strain the potatoes, and place in a large mixing bowl.
  2. While the potatoes are boiling, melt the butter in a sauce pan and just before the butter is fully melted, add the milk and whipping cream. Continue stirring until the butter is full melted and the liquid is warm.
  3. Add some of the warm cream mixture to the mixing bowl with the potatoes and being to mash the potatoes (I prefer using a hand mixer for a fluffier, smoother consistency). Add the remaining amount of the warm cream and continue mixing until the potatoes are fluffy and smooth. Add the salt and pepper to taste and mix a little more.
  4. Serve the mashed potatoes warm and enjoy!
