Fruit pizza
Ingredients:
- 1 pkg Betty Crocker sugar cookie mix (or you can use a roll of refrigerated sugar cookie dough)
- 1 c frozen whipped topping (we use Cool Whip)
- 8oz cream cheese
- 1/2 c sugar
- 1/2 tsp vanilla extract
- 1 c canned crushed pineapple
- 1 lb fresh strawberries, sliced
- 18 oz fresh blueberries
- 1/4 c mini chocolate chips (I prefer semi-sweet)
- optional toppings – shredded coconut, pecans
Instructions:
- Preheat oven to temperature as required by sugar cookie package.
- Line a baking sheet with parchment paper. I like to use a jelly roll sheet. Prepare cookie dough in accordance with pacakge directions. Then make twelve, 2in wide and 1/4in thick, flat circles (or slices of the roll cookie dough). Place 3 rows of 4 cookie dough circles, with the circles touching, on top of the parchment paper. If there is open space between the dough circles, feel free to fill it in with excess dough. The cookie dough will expand to make a baked rectangle-shaped cookie. Bake the cookie dough in accordance with the package directions (I bake the Betty Crocker dough for 13-15 minutes, to make sure it is a good, crisp base).
- While the dough is baking, in a large bowl, combine frozen whipped topping, cream cheese, sugar, and vanilla extract and mix with a mixer (I use the whisk attachment on my stand mixer).
- After the cookie rectangle has baked and completely cooled, remove it from the parchment paper (should just slide off) and place it on the platter you plan to serve it on.
- On the cooled cookie, spread the whipped topping mixture, to form an even layer across the entire cookie. For the next layer, evenly spread the crushed pineapple on top of the whipped topping mixture.
- Pick a design plan for the blueberries and sliced strawberries – stripes, random, rings, circles, whatever works for you – and place on top of the crushed pineapple layer, covering the entire area of the cookie. Sprinkle the mini chocolate chips over the fruit and if including, the optional shredded coconut and pecans.
- Chill in the refrigerator for at least two hours before serving.
