Italian sausage + Spinach pasta

Ingredients:

  • 1 5-6oz package of fresh baby spinach
  • 1 9oz package of fettuccine noodles (we use Buitoni)
  • 1.25lbs ground Italian sausage
  • 1 jar of marinara (we use Rao’s)
  • 1 tbsp olive oil
  • salt and pepper to taste 

Instructions:

  1. Cook the sausage in a skillet over medium heat until it is fully cooked. Drain the grease and set the sausage aside. 
  2. Cook the noodles according to the package directions, drain and set aside. 
  3. Then cook the spinach. Heat the olive oil in a skillet over medium heat, add the spinach and stir regularly until the spinach is fully cooked down. 
  4. While the spinach is cooking, heat the marinara in a saucepan over low heat or warm in the microwave. 
  5. Combine the sausage, noodles, and spinach in a serving bowl, top with the marinara and season with salt and pepper. Another option is to keep the sausage, noodles, spinach, and marinara separate and each person can make their own bowl to their liking. Serve warm.
