Mediterranean savory stuffing

Ingredients:

  • 1.25lb ground beef (I like 80/20 or leaner)
  • 1 yellow onion, chopped
  • 2 large celery stems, chopped
  • 1 heaping tbsp fresh dill, finely chopped
  • 1 can (15oz) chick peas, rinsed 
  • 1 bag instant white rice (should be about 1 c dry rice)
  • 1/4 c tomato sauce
  • 1 tsp allspice
  • 1 tsp salt
  • 1/2 tsp course ground black pepper
  • 1 tsp garlic powder
  • 3/4 tsp paprika 
  • 2 c water
  • 1 tbsp olive oil 

Instructions:

  1. Fill a bowl with water and place bag of rice in the bowl to soak for 20-30 minutes.
  2. Prepare all fresh ingredients, onion, celery, and dill, keeping the dill separate.
  3. On medium heat, pour olive oil into a large skillet or pot. Add the onion and celery and cook for about 5 minutes. 
  4. Add the ground beef to the skillet and crumble using a wooden spoon. While cooking the ground beef, add the allspice, salt, pepper and garlic powder and stir in to combine. Continue to cook the ground beef until it is cooked through. 
  5. Add the chick peas and cook for 1 minute, then reduce the heat to low. 
  6. Add the dill, rice (that has been soaking), tomato sauce, and paprika. Then, add the water, stir and bring to a simmer for a few minutes (until the liquid has slightly reduced). Reduce the heat to low, cover, and cook for 20-30 minutes, until rice is tender. 
  7. Serve warm with toasted pita bread and Tztaziki sauce.
