Savory + Sweet Spinach Salad
This salad is perfection – the tastiest combination topped with a tangy vinaigrette and easy enough to make for a party or weeknight meal.
Ingredients:
Salad
- fresh baby spinach (about 4 big handfuls)
- 2 c quartered strawberries
- 1/2 red onion (thinly sliced)
- 1/2 c sliced almonds
- 4 oz goat cheese
- 1 tbsp olive oil
Dressing
- 1/2 c olive oil
- 1/4 c white wine vinegar
- 1/4 c apple cider vinegar
- 1/4 c white sugar
- 1 tsp minced onion
- 1/4 tsp paprika
- 1/4 tsp salt
Instructions:
- Combine all ingredients for the salad dressing and shake well to mix. The salad dressing is best the day it is made.
- In a skillet, pour the 1 tbsp of olive oil and warm on medium heat. Add the sliced red onion and almonds to the skillet. Stir regularly until onions are soft and almonds are slightly browned (usually about 10 minutes). Set aside to cool.
- In a large bowl, combine the spinach, strawberries and goat cheese. After the onion and almond mixture has cooled, add it to the salad. Lightly toss the salad to combine all ingredients.
- Top the salad with the desired amount of dressing, lightly toss again and serve or serve individual salads with the dressing on the side.
