Sheet pan sausage + potatoes + onions + peppers

A chop, toss and bake dinner that has it all – one of our family favorites.

Ingredients:

  • 1 package of smoked sausage (14oz)
  • 8-10 medium red potatoes (or 2 large baking potatoes)
  • 3 bell peppers (red, orange or yellow)
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp course ground black pepper
  • 1/2 tsp salt
  • foil

Instructions:

  1. Preheat oven to 400 degrees.
  2. Chop onion, bell peppers and potatoes into bite size pieces. 
  3. Slice sausage into thin coins. 
  4. Line sheet pan with foil.
  5. Place the chopped onions, bell peppers, potatoes, and sausage onto the lined sheet pan. Drizzle mixture with the olive oil and stir to coat. 
  6. Sprinkle garlic powder, onion powder, pepper, and salt onto the mixture and stir to coat. 
  7. Make sure the mixture is evenly spread throughout the baking sheet (not stacked) and place sheet pan with mixture into the oven.
  8. Bake for 20 minutes at 400 degrees.
