Simple greek salad
An almost authentic Greek salad that is fresh, tasty, and easy to toss together.
Ingredients:
- 1 large cucumber (peeled and chopped)
- 1/2 pint cherry tomatoes (halved)
- 1/2 red onion (sliced)
- 3/4 c crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp fresh lemon juice
- 1/2 tsp oregano
- salt and pepper to taste
- optional: handful of kalamata olives
- optional: 1 green bell pepper chopped
Instructions:
- Place cucumber, cherry tomatoes, red onion, and crumbled feta in a bowl. Optional: add in chopped green bell pepper.
- Add olive oil, oregano, and salt and pepper to the vegetable mixture and top with lemon juice. Gently toss to mix all ingredients together. Optional: with kalamata olives after tossing.
- Cover salad and chill for 30 minutes prior to serving.
