Simple greek salad

An almost authentic Greek salad that is fresh, tasty, and easy to toss together. 

Ingredients:

  • 1 large cucumber (peeled and chopped)
  • 1/2 pint cherry tomatoes (halved)
  • 1/2 red onion (sliced)
  • 3/4 c crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tsp fresh lemon juice
  • 1/2 tsp oregano
  • salt and pepper to taste
  • optional: handful of kalamata olives
  • optional: 1 green bell pepper chopped

Instructions:

  1. Place cucumber, cherry tomatoes, red onion, and crumbled feta in a bowl. Optional: add in chopped green bell pepper. 
  2. Add olive oil, oregano, and salt and pepper to the vegetable mixture and top with lemon juice. Gently toss to mix all ingredients together. Optional:  with kalamata olives after tossing.
  3. Cover salad and chill for 30 minutes prior to serving.
